If you’re looking for a really good cocktail bar, look no further than the Plateau’s own Le Lab, a unique, speakeasy-style bar that packs a serious punch. Opened by master mixologist Fabien Maillard, le Lab takes pride in creating carefully-crafted and complex cocktails following both old and new recipes, always with a twist, and preparing drinks with excellent showmanship. When you enter, you’ll be greeted by a charming old-timey decor, complete with old armoires and a beautifully preserved absinthe fountain. If you sit at the bar, you’re likely to see some serious juggling numbers and fire play while your cocktail is being made. You can pick from a delicious array of drinks, or ask one of the bartenders to create something for you based on what you feel like having.

We went on a Monday night and tried four drinks, both classics and some of Le Lab’s unique concoctions. Seated close to the entrance by the window, we had a great view of the bar’s beautiful interior.

Our first two drinks were the Lavender May (Tanqueray Rangpur gin, lavender infusion, raspberry, coconut cream and lemon) and a special concoction to satisfy my rum craving, a rum and vanilla old fashioned. Both drinks were complex, boozy in the best way and really hit the spot. For the second round, I got a Labviation (Tanqueray Rangpur gin, Parfait Amour, Pages elderflower and lemon) and my friend decided to ask for a classic gin martini, both of which were again splendid, and beautifully presented.

If you want to take a taste of Le Lab home, consider buying one of their homemade syrups or bitters, with flavours like tropical bbq and hell’s ginger which are all used in their drinks. Overall a wonderful place to visit if you want to try some exceptional cocktails during your stay in the Plateau!
